hash brown reuben casserole
I found a recipe for this in an older cooking magazine and when I tried it, it was sooooo good! It inspired this recipe. If you like Reuben's you will love this easy dish!

Ingredients For hash brown reuben casserole

20 ozfrozen hash browns

1 1/2 lbthinly sliced corned beef

1/2 cthousand island dressing

1 1/2 csauerkraut

1 lbsliced Swiss cheese
How To Make hash brown reuben casserole

1Spray a 13" casserole with non-stick spray. Lay in the frozen hash browns. Bake at 450 degrees F for 10-12 minutes.

2Lay on the corned beef. If it's thinly sliced, double it and make sure the meat overlays itself.

3Spread on the dressing.

4Spread the sauerkraut over top and make sure it's even.

5Lay down the cheese. (If you use shredded, you can make the pieces smaller, but these nice big slices kind of help you "divvy" up the portions. Each of the 6 pieces is perfect with a salad and some dark or light rye bread.)

6Bake an additional 20-25 minutes. When you have leftovers, they are perfect to be placed in a zipper bag (once cooled) and stacked in the freezer. If you love reubens, you will love this.
