I make this ahead and freeze. On the day I want to serve this, I simply thaw the meat mixture, layer in tortillas, top with cheese, and bake! I serve this with Mexican Rice

1 lbground beef

1 mdonion, chopped

1 Tbspchili powder

1 tspcumin

1 tspgarlic

1/2 tsporegano, dried

1/2 tspcrushed red pepper

16 oztomato sauce

1 canbeans (any variety)

1 canwhole kernel corn

1 can(4.5 oz) green chilies

2-3 lgtortillas

2 cshredded cheese (of your choice)
How To Make quesadilla casserole

1Cook together ground beef and chopped onion.

2In a large mixing bowl, mix together the meat mixture and all of the ingredients, except tortillas and cheese.

3FOR FREEZER VERSION: Place this mixture in a freezer-safe zip top bag or container. Thaw on day of serving.

4Layer tortillas, meat, cheese and repeat, ending with cheese. Bake at 400 until bubbly and cheese is melted and golden brown.
