I made this for dinner tonight. Not only was it tasty, but it's made with ingredients I always keep on hand and it comes together fast. Enjoy!

We were surprised at how much we enjoyed this Mexican taco lasagna. It's basically a layered casserole that takes beef and bean tacos to a new level. This casserole has the flavors of tacos and adds gooey cheese and beans for a hearty meal. It takes a little bit of time to prepare, but it's still easy enough for a weeknight meal. We topped ours with a little sour cream, taco sauce, and jalapenos. But, use your favorite toppings. On the side, we served charro beans and Spanish rice for a full meal.

3/4 cchunky salsa, divided

66-inch flour tortillas

1 canrefried beans (16 oz)

If you think the meat mixture is too thick, add up to 1/4 cup water to the mixture.

1Preheat oven to 350 degrees F. Brown ground beef in a skillet. Drain grease. Mix in taco seasoning. Then stir in 1/4 cup of salsa.

2Spread refried beans on one side of each tortilla. Depending on your family's preference, go as heavy or as light as you want.

3In a 9x13 baking dish, add a small amount of the meat mixture on the bottom and spread to cover the bottom.

4Next, layer 2 of the tortillas with the beans down.

5Then, top the tortillas with a little meat and cheese.

6Layer 2 more times for a total of 3 layers. In the final layer, add the rest of the meat mixture, remaining 1/2 cup salsa, and a few shakes of taco sauce.

7Top with cheese.

8Bake uncovered for 20 minutes or until melted and bubbly.

9Serve with toppings such as sour cream, jalapeño, guacamole, etc.
