A great cinco de mayo meatloaf makeover. Not too spicy, but you can add more chili powder to your taste.

Ingredients For mexican meatloaf

  • 2 lb
    lean ground beef or ground turkey
  • 1
    14-1/2 oz can stewed tomatoes with chiles
  • 1 c
    bread crumbs
  • 1
    onion, chopped
  • 1/2 c
    egg beaters
  • 1-1/2 tsp
    ground cumin
  • 1 tsp
    chili powder
  • 1 tsp
    minced garlic
  • 1/2 tsp
    each, salt and pepper

How To Make mexican meatloaf

    Heat oven to 350. Spray a 9" x 5" loaf pan. In lg bowl combine all ingredients, mix well.

    Place mix evenly into pan. Cover w/ foil, bake 50 mins. Uncover, bake 10 mins.
