We love enchilada's but they are time consuming to make so occasionally I use this recipe. Note: I add 1 can Roto-Tel Tomatoes for extra flavors. I don't like black bean so add either Pinto Beans or Refried Beans.

Ingredients For mexican beef casserole

1 lblean ground beef

1 sliceonion
-
1 cankernel corn (drained)

1 canblack, pinto or refried beans (drained for black or pinto)

1 pkgtaco seasoning mix

8 to 12 corn tortillas
-
3/4 csour cream (you may use nonfat)

1/3 cmexican blend shredded cheese
-
sliced jalapeno peppers
How To Make mexican beef casserole

1Brown Ground Beef & Onions & tomatoes together for about 10 to 12 Minutes-drain

2Spray Baking Dish 1 Quart (8X12)

3Place half of the tortillas in bottom.

4Spoon half of beef mixture on top, place sour cream over beef. Then layer last tortillas & then beef mixture.

5Place in heated 350 degree oven & bake for 25 minutes. Remove from oven & sprinkle with cheese & add sliced jalapeno peppers on top. Cook for another 5 minutes or till cheese is melted. Let stand for 5 minutes & serve.
