melt in your mouth meatloaf
I will be honest, my family has never been a big fan of meatloaf. Sometimes you have to be creative and use different spices and ingredients to make something plain stand out. So this is my spin on meatloaf and although my family isn't a big fan of meatloaf, this recipe is one they actually like!

Ingredients For melt in your mouth meatloaf

2 lblean ground beef
-
16 ounce package of stove top chicken stuffing mix

1 cwater
-
2eggs beaten
-
2 tspchili powder
-
1 cthick and chunky salsa ( divided )

1 cshredded cheddar jack cheese
-
1/2 ccorn
-
1 cbarbecue sauce ( any flavor )
How To Make melt in your mouth meatloaf

1Preheat oven to 375 degrees.

2Mix all the ingredients except the bbq sauce, cheese and 1/2 cup of the salsa.

3Shape into an oval loaf and place in a 9 x 13 baking dish. Top with bbq sauce and remaining salsa.

4Bake 1 hour. Top with the cheese and bake for 5 more minutes until cheese is melted.
