Having a large family, I've learned to make larger meals. This is a large meatloaf that you can either cut the recipe in half or freeze some for a quick microwave meal later.

Ingredients For meat loaf

1 lbground beef or chuck 93% lean

1 lbground turkey
-
2eggs
-
1 smoinion chopped
-
3-4 pinchparsley (fresh is best but dried is ok)

1/4 cchopped celery
-
3-4 slicedried bread or equal amount in dried bread crumbs

1 can12 oz tomato sauce
-
2-3 dashsalt
-
3-4 dashground black pepper
How To Make meat loaf

1Mix all ingredients by hand in large bowl until well blended.

2Put in casserole dish with lid and form with hands to flatten top and move loaf away from sides of dish.

3Bake at 425 degrees F 45 minutes, remove lid and bake another 15 minutes or so until top browns nicely.

4I serve with some kind of potatoes, mashed or boiled and a vegetable. I usually serve a green veggie, leafy or otherwise. Squirting a bit of ketchup on top of the meatloaf adds more zing to it if you so choose.
