This is our favorite spagetti dinner...we make it extra special by adding everything but the kitchen sink into it. Yes, there are a lot of ingredients, and yes it takes awhile, so please don't be put off, it is well worth the effort. It has layers of flavor that taste even better the next day after chilling in the fridge. I hope that you enjoy this recipe.

- SPICY TOMATO AND VEGETABLE SAUCE

1cup sweet onion, chopped

4garlic cloves, minced

1/2cup green pepper, sweet, chopped

1/2cup red pepper, sweet, chopped

1/2cup celery, diced
-
1/2cup carrot, diced
-
1/2cup mushroom, diced
-
1/2cup zucchini, diced
-
1/4cup extra virgin olive oil
-
1/4teaspoon lemon salt
-
1teaspoon oregano
-
11/2teaspoons parsley
-
1teaspoon basil
-
6cloves, whole
-
1/2teaspoon caraway seed, whole

11 large bay leaf
-
1teaspoon chili pepper flakes
-
1/2teaspoon coarse sea salt
-
2tablespoons white sugar
-
2(56 ounce) cans tomatoes (diced or stewed)

1(28 ounce) can tomato sauce (hunts thick and spicy)

3ounces tomato paste

1/2cup chicken stock

1/2cup v 8 vegetable juice, original

1cup dry red wine

1/4cup grated romano cheese

1/4cup grated asiago cheese
- MEATBALLS

1/2lb ground veal
-
1/2lb ground beef
-
1/2lb ground pork

1large shallot, chopped
-
2garlic cloves, minced

1large egg, slightly beaten

2slices rustic bread
-
1/2cup parmesan cheese, freshly grated

1/2teaspoon salt
-
1/2teaspoon black pepper, fresh ground

1teaspoon oregano

- MEATS

2italian sausages, extra hot, cut 1 inch chunks

2talian sausages, sweet fennel cut 1 inch chunks

1large, pepperoni, cut 1 inch chunks (do not omit)
How To Make kato's garage style tomato sauce & meatball dinner

1SPICY TOMATO & VEGETABLE SAUCE - In a large pot, cook the onion and garlic for a few minutes, in olive oil, over medium heat, then add the red and green peppers, then add the celery, and carrots.

2Next add the lemon salt, celery salt, oregano, parsley, basil, cloves, caraway seeds, bay leaf, chili pepper flakes and coarse sea salt. (Cook 5 minutes, until it starts to caramelize), then add the mushrooms and zucchini.

3Now add the white sugar, diced tomatoes, tomato sauce, tomato paste, chicken stock, V8 juice, red wine and cheeses and simmer over low heat for 30 minutes.

4MEATBALLS - Combine the beef, pork, veal, shallot, garlic, egg, prepared bread, Parmesan cheese, salt, pepper, oregano and parsley in large bowl and gently mix by hand.

5Roll into balls,(your favorite size) and drop raw into the simmering sauce.

6To the sauce add the raw sausages and pepperoni and cook gently on low for 3 hours.

7Serve over hot buttered noodles with a nice Italian bread and a simple green salad.
