Ingredients For jen's wine & blue burgers

1 1/2 lbground sirloin

3scallions, white and green parts chopped

2 tspgrill seasoning

2 tspworcestershire sauce

1/2 cfull-bodied red wine, (such as zinfandel

2 Tbspolive oil
-
1 cbuttermilk
-
1 cblue cheese, crumbled
-
1/2 tspcoarse black pepper
-
a dash of salt
-
1/2 tsphot sauce, add more if desired

4kaiser rolls, split and lightly toasted
-
1-2 bunchwatercress, trimmed of any thick stems

6ribs celery, cut into sticks

3carrots, cut into sticks
How To Make jen's wine & blue burgers

1In a small mixing bowl, combine the buttermilk, blue cheese, hot sauce and a little salt and pepper. Mix until thoroughly combined.

2In a bowl, combine the ground sirloin, scallions, grill seasoning, Worcestershire and the red wine, and mix until thoroughly combined. Using the back of your hand, score the meat into 4 equal portions then make each portion into patties about an inch thick.

3Preheat a large skillet over medium-high heat with 2 turns of the pan of olive oil, about 2 tablespoons. Once it starts to ripple, add the patties and cook for 6-7 minutes on each side, until they reach desired doneness.

4Place a burger on top of each toasted bun bottom, top that with some of the watercress and a couple of dollops of the blue sauce. Serve with carrot and celery sticks alongside.
