This recipe came as an accident in an attempt to clean out the fridge. I love hot roast beef sandwiches with horseradish cheddar cheese. I opened the fridge and knew I needed to use that Naan (flatbread), but I wanted a sandwich. Then everything just fell into place...I said, "carmelized onions would be great!" Then I was sad because I didn't have bell peppers to toss in, but wait! I did have pepperoncini! Holy moly this is ever so yummy and quick. Just throw it on the bbq grill to crisp up the Naan, melt the cheese and warm through. Note to self: Great use for leftover prime rib!

Ingredients For grilled roast beef and horseradish cheddar naan

  • THINGS YOU WILL NEED:

    naan (indian flatbread)
  • 1/2
    onion, slices about 1/4"
  • 5-6
    roast beef slices (from the deli)
  • 1 c
    horseradish cheddar cheese (grated or slices to cover roast beef
  • 5-6
    pepperoncini peppers, stems and seeds removed rough chop
  • 2 Tbsp
    mustard (coarse or german style) i used trader joe's garlic aoli mustard
  • 2 Tbsp
    butter
  • 1 Tbsp
    olive oil

How To Make grilled roast beef and horseradish cheddar naan

    Slice onions and caramelize in butter and olive oil. Remove with a slotted spoon to a bowl.

    Grate horseradish cheddar and rough chop peppers.

    Lightly spread mustard on Naan. Layer roast beef slices, then onions, grated horseradish cheddar, top with peppers.

    Place on a preheated barbecue grill (350). Turn after a few minutes to get good grill marks on the bottom and get a crispy, "wood oven-like" crust. WATCH it carefully....keep the heat low and move so as not to burn the bottom. When cheese is melted and is heated through, remove to plates.
