1 1/2 lblean ground beef

1/4 cbeef stock - (more if needed to keep moist while cooking)

1 canrefried beans

1 canblack beans - drained
-
1 canwhole corn - drained
-
1 cangreen chilies - drained ( small can )

2 tspfresh oregano - chopped
-
2 tspground cumin
-
2 tspchili powder
-
1 lgjalapena pepper - chopped

1 tspsalt - or to taste
-
12 md6 or 8 inch corn tortillas ( depending on size of crock pot )

3 Tbspbutter - melted
-
2 1/2 cpepper jack cheese - shredded
-
4 clettuces - shredded
-
2 tspsmoked paprika
-
3 ctortilla sauce - your choice
How To Make fireman bob's crock pot comfort food beef surprise

1In a large bowl, combine the meat, beans, corn, chilies, oregano, beef stock, cumin, chili powder, jalapeno, and salt.

2Brush each tortilla with butter.

3Spoon the meat mixture over tortilla.

4Spread tortilla sauce over meat. Sprinkle first the lettuce, and then the cheese over meat mixture. Sprinkle with paprika.

5Place tortillas in crock pot in layers.

6Top with plenty of cheese.

7Cook on low for 4 hours, add beef stock if needed to keep moist.

8Serve with a good Crusty Bread. Enjoy !!!!!
