This is a recipe I made up after looking for a one skillet dinner. Everything looked good! So I made something of my own. Turned out pretty well! I think next time I will add asparagus.

Ingredients For concrete cowboy hash

  • 1 lb
    lean ground beef, browned and drained
  • 1 pkg
    mushrooms, sliced - kind is to your preference
  • 1 md
    onion, chopped
  • 1 sm
    can shoe peg corn, drained
  • 1 can
    french green beans, drained
  • 1 box
    uncle ben's wild & long grain rice quick cook recipe
  • 2 c
    chicken broth
  • 4
    eggs, optional
  • 2 Tbsp
    olive oil, extra virgin
  • to taste
    salt and pepper, see note

How To Make concrete cowboy hash

  • 1
    In a cast iron or oven friendly large skillet add olive oil. Saute sliced mushrooms. When mushrooms are half cooked, add chopped onion and cook until tender. Set aside

    Brown burger and drain.
  • 3
    Add back in mushrooms and onion, corn, green beans, wild rice and seasoning packet. Mix well. Add chicken broth until almost to the top of the mixture. Cover and let cook for about 5 minutes, or until the rice is tender.

    Make four small wells and add an egg into each. Put into oven and let cook until the egg is to your liking. This step is optional.

    Serve and enjoy! Note: This recipe doesn't need added salt due to the rice seasoning packet - but if you like more feel free.
