If you're looking for a simple Christmas Eve dinner idea, this would be it! It will make a beautiful presentation on the table and it's super yummy. The mix of meats is tasty. Ham adds another layer of flavor and everything's better with cheese.

Ingredients For christmas meat roll

  • 1 lb
    ground beef
  • 1 lb
    ground pork
  • 1/2 lb
    deli ham
  • 1 c
    bread crumbs
  • 2 lg
    eggs
  • 1 c
    tomato juice divded
  • 1 pkg
    onion soup mix
  • 1/2 Tbsp
    salt
  • 4 clove
    garlic minced
  • 1/2 c
    red bell pepper chopped
  • 1/2 c
    green bell pepper chopped
  • 1 c
    spinach chopped fine
  • 1/2 c
    mushroom chopped fine
  • 1 1/2 c
    shredded Swiss cheese
  • 1/4 c
    fresh parsley finely chopped

How To Make christmas meat roll

  • 1
    Mix the ground beef, ground pork, bread crumbs, eggs, 1/2 cup of tomato juice, onion soup mix, and salt. Set aside.

    Place oil in pan. Saute the garlic, red bell pepper, green bell pepper and mushrooms until softened. Add the spinach and cook until wilted. Remove from heat and set aside.

    Flatten out the meat into a large square on wax paper. Place the deli ham slices on top of meat. Spoon the veggies over top the ham. Sprinkle the cheese over top.

    Using the wax paper roll the meat jelly roll style sealing the edges. Place seam side down on greased baking pan.

    Bake at 350 degrees for about 45 minutes. Pour the other 1/2 cup tomato juice over top. Top with parsley and cook another 10 minutes.

    Remove from oven and let rest 10 minutes and then cut into slices.
