cheesy meat loafs minis
I was looking for a way to intrigue my Grandson with meatloaf and found this recipe. I have also tweaked it some and will use ritz crackers and/or breadcrumbs, put a little more ketchup in the mix and always put more ketchup on top near the end of baking. This recipe will make 6 mini meatloaves! If made as above, it has 256 calories, 11 grams of protein, 11 mg of carbs and points + is 7. (Yes this is one of my Weight Watchers recipes!)

1/2 cfresh breadcrumbs (about 1 ounce)

cooking spray

1 cchopped onion

2 clovegarlic

1/2 cketchup, divided

3 ozwhite cheddar cheese, diced

1/4 cchopped fresh parsley

2 Tbspgrated parmesan cheese

1 Tbspprepared horseradish

1 Tbspdijon mustard
-
3/4 tspdried oregano
-
1/4 tspsalt
-
1/4 tspfreshly ground black pepper

1 1/2 lbground sirloin

1 lgegg, lightly beaten
How To Make cheesy meat loafs minis

1Preheat oven to 425°.

2Heat a skillet over medium-high heat. Add breadcrumbs; cook 3 minutes or until toasted, stirring frequently.

3While breadcrumbs cook, heat a large skillet over medium-high heat. Coat pan with cooking spray. Add onion and garlic; sauté 3 minutes. Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients. Shape into 6 (4 x 2-inch) loaves on a broiler pan coated with cooking spray; spread 2 teaspoons ketchup over each. Bake at 425° for 25 minutes or until done.
