When you want an easy and comforting dinner, add this beef enchilada bake to your menu. Each enchilada is filled with beef and cheese with a few tomatoes, onions, and black olives mixed in for extra flavor. Delicious served with refried beans and Spanish rice for a Mexican-inspired meal at home.

Ingredients For beef enchilada bake

  • 1 1/2 lb
    ground beef
  • 2 pkg
    taco seasoning
  • 1 can
    black olives (2.25 oz)
  • 2 md
    tomatoes
  • 1/2 lg
    onion
  • 1 can
    medium-hot enchilada sauce (28 oz)
  • 6
    soft taco size flour tortillas
  • 3 c
    shredded cheddar cheese
  • sour cream, to taste

How To Make beef enchilada bake

  • Preheat oven.

    Preheat oven to 350 degrees F.
  • Prepare ground beef as directed on seasoning packages.

  • Place chopped olives, tomatoes, and onion in a bowl.

    Drain olives and cut into quarters. Chop tomatoes. Chop onion. Place all 3 ingredients in a bowl and toss together; set aside.
  • Add a thin layer of enchilada sauce to a baking dish.

    Spray or grease a 9x12 baking pan and put a thin layer of enchilada sauce on the bottom of the pan.
  • Lay ground beef in the center of a tortilla.

    Lay one of the tortillas flat and layer with prepared ground beef.
  • Add the tomato mixture.

  • Sprinkle with cheese.

    Then a healthy amount of cheese.
  • Roll the tortilla and place in the baking dish; repeat with tortillas.

    Roll the tortilla up and place it seam side down into the pan. Repeat the process until all six tortillas are filled.
  • Cover tortillas with enchilada sauce.

    Carefully pour enchilada sauce over the top, covering each enchilada completely.
  • Top with shredded cheese.

    Top with about 1 cup of cheese.
  • Cover with foil and bake.
