Ingredients For beef enchilada bake

1 1/2 lbground beef
-
2 pkgtaco seasoning
-
1 canblack olives (2.25 oz)

2 mdtomatoes
-
1/2 lgonion
-
1 canmedium-hot enchilada sauce (28 oz)

6soft taco size flour tortillas
-
3 cshredded cheddar cheese
-
sour cream, to taste
How To Make beef enchilada bake

1Preheat oven to 350 degrees F.

2Prepare ground beef as directed on seasoning packages.

3Drain olives and cut into quarters. Chop tomatoes. Chop onion. Place all 3 ingredients in a bowl and toss together; set aside.

4Spray or grease a 9x12 baking pan and put a thin layer of enchilada sauce on the bottom of the pan.

5Lay one of the tortillas flat and layer with prepared ground beef.

6Then the tomato mixture.

7Then a healthy amount of cheese.

8Roll the tortilla up and place it seam side down into the pan. Repeat the process until all six tortillas are filled.

9Carefully pour enchilada sauce over the top, covering each enchilada completely.

10Top with about 1 cup of cheese.

11Cover with foil and bake for 45 minutes. Serve with sour cream.
