I've been making this for years...it doesn't look like pizza, but that's what they call it...smells good when baking...I honestly thought I could smell the pepperoni, and there's none in it! We like it alot...it's best when it's eaten warm, although it's still okay when cooled...

Ingredients For zucchini pizza

2 cshredded/grated zucchini

1 cfinely chopped onion

1/2 colive oil
-
4slightly beaten eggs
-
1/2 cromano cheese, grated (fresh or can)

dashpepper
-
1/2 tspsalt
-
1/2 tsporegano, dried
-
2 Tbspparsley flakes (dried)

1 cbisquick baking mix (or jiffy mix)
How To Make zucchini pizza

1Preheat oven to 350°F. Grease either a 13" x 9" x 2" pan OR 15" x 10" x 1" jellyroll pan.

2Mix all ingredients together in bowl. Pour into pan.

3Bake @ 350° for 40 minutes for cake pan; 30 minutes for jelly roll pan. It should be a light golden brown on top.

4Remove from oven & let cool slightly and cut in serving squares.
