Ingredients For tortellini soup

1 lbitalian sausage, no casings
-
1 conion, coarsely chopped
-
2 clovegarlic, sliced
-
5 cbeef broth
-
1/2 cwater
-
1/2 cdry red wine or water
-
2 ctomatoes (or 4 medium chopped, seeded, peeled tomatoes)
-
1 ccarrots, thinnly sliced
-
1/2 tspbasil
-
1/2 tsporegano
-
8 oz(1 can) tomato sauce
-
1 1/2 czucchini (mom said she used canned if she had to)
-
8 ozcheese filled tortellini
-
3 Tbspparsley
-
1 mdgreen pepper, cut in to 1/2 pieces. (i omit cuz i don't like green pepper!!)

grated parmesan cheese
How To Make tortellini soup

1If you use sausage that came in a casing, remove.

2In a 5 quart dutch oven, brown the sausage. Remove the sausage, but keep about 1 tablespoon of the drippings in the dutch oven.

3Saute the onions & garlic in the sausage drippings in the dutch oven until the onions are tender.

4Add beef broth, water/wine, tomatoes, carrots, basil, oregano, tomato sauce & sausage. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes (savor the aroma!!)

5Stir in zucchini, tortellini, parsley, & green pepper. Cover and simmer for an additional 35-40 minutes or until the tortellini are tender.

6When serving, sprinkle with the grated parmesan cheese, if desired. (I skip this!) Serve with yummy warm crusty bread or bread sticks!
