This is a dish that I've prepared for my family for over 20 years and they still love it every time as if it is the first time they've tasted it. Everybody I've made it for loves it and begs for more.

Ingredients For skillet zucchini pizza

  • 1 can
    tomato sauce
  • 2-3
    sliced zucchini (sliced into wheels)
  • 1
    medium sized onion (sliced into rings)
  • 1 can
    mushroom pieces
  • 1
    green pepper (sliced into strips)
  • 1 c
    sliced pepperoni
  • 1 1/2 c
    shredded mozzarella cheese
  • salt and pepper (to taste)
  • 1 Tbsp
    italian seasoning
  • PLEASE NOTE: YOU CAN USE ANY INGREDIENTS THAT YOU WOULD NORMALLY HAVE ON TRADITIONAL PIZZA
  • 2 Tbsp
    olive oil

How To Make skillet zucchini pizza

    Heat olive oil in large skillet over medium heat. Add zucchini slices, pepperoni, mushrooms, onions, green peppers. Sprinkle with salt, pepper, and Italian seasoning. Cook 10 minutes or until pepperoni and vegetables start to soften, stirring frequently (so nothing sticks or scorches).

    Turn heat to low and cover ingredients with mozzarella then pour tomato sauce over cheese until all is covered. Let simmer 20 minutes or until cheese is completely melted.

    Serve immediately with warm garlic bread.
