i just tried this recipe tonight and it turned out great . usually i just make it plain, but tonight i wanted to try it with veggies and it was delicious !

Ingredients For risotto with vegetables.

1 pkgarborio rice

1 mdchopped onion

2/3 cwhite wine

6 cchicken broth

1 stickbutter, unsalted

1 cparmesan cheese

2 mdzucchini chopped

2 mdbell pepper , red and yellow. chopped
How To Make risotto with vegetables.

1chop vegetables and fry them separate in little bit of olive oil. dry on paper towel. prepare 6 cups of chicken broth and let it simmer .

2in large pot melt one stick unsalted butter . add arborio rice . let it get a tiny bit brown. keep stirring. then add wine and let it evaporate . a little at a time add scoops of broth and keep stirring . keep doing this until all broth is gone . rice is supposed to be tender but firm. a little bit al dente . dont overcook.

3at this point add the cooked veggies . mix well. add parmesan cheese and mix well. serve hot . enjoy !!
