I live in Milan,in winter we have bad weather, always with rain, fog and humidity. Risotto is "the sun in your dish" and all your family becomes happy!

Ingredients For risotto alla milanese

320 gcarnaroli or arborio italian rice

100 gbutter
-
1fresh sliced white onion

50 gitalian parmesan
-
2 lvegetarian or meet stock

1 tspsaffron powder

1 cdry white wine
How To Make risotto alla milanese

1Heat your stock and in the mean time put 50 grams of butter in a large saucepan with the sliced onion and fry slightly, pour the rice and heat it stirring for 2 minutes, pour the white wine and let it avaporate.

2Start pouring a little amount of the hot stock on the rice and stir, when it is absorbed put in another laddle and stir, after 10 minutes add the saffron powder,melted in one laddle of stock, salt and finish cooking always stirring and pouring stock.

3After about 18 minutes the risotto is cooked, add the parmesan and the rest of butter,stir once more and turn off fire. Serve hot, very good with sausages in tomato sauce.
