Ingredients For rice pie

  • 8 c
    cooked rice
  • 1 1/2 c
    parmesan cheese
  • 1 lg
    egg
  • 1 c
    ricotta cheese
  • 1 lb
    chpd. meat
  • 1/2 can
    tomato puree (29 oz can use half)
  • 1 md
    onion, chopd
  • a few basil leaves, rippd into sml pieces or 1/4 tsp dry
  • 1/2 c
    frozen peas
  • TOPPING
  • 1 1/2 c
    breadcrumbs (i use flavored)
  • 1/4 c
    olive oil
  • 1 lg
    clove of garlic, grated (we love garlic so i use 2)
  • 1/4 c
    parmesan cheese

How To Make rice pie

    IN A LARGE BOWL ADD AN EGG, PARMESAN CHEESE, RICOTTA CHEESE AND 1/4 TSP OF SALT N 1/4 TSP BLACK PEPPER TO RICE. MIX UNTIL WELL COMBINED N SET ASIDE.

    IN A LARGE PAN BROWN CHOPPD MEAT ALONG WITH CHPD ONION JUST UNTIL MEAT IS NO LONGER PINK. DRAIN OFF GREASE N ADD 1/2 CAN OF TOMATO PUREE, BASIL N SEASON WITH 1/2 TSP SALT N 1/4 TSP BLK PEPPER...STIR N LET SIMMER FOR 30 MINUTES THEN STIR IN FROZEN PEAS. (OR U CAN USE ANY MEAT SAUCE U PREFER...JUST HEAT UP N ADD FROZEN PEAS)

    I USED AN 11X7 GLASS BAKN DISH. PUT 1/2 OF RICE MIXTURE INTO BAKN DISH N PRESS DOWN TO COMPACT N SMOOTH OUT.

    NEXT SPOON IN MEAT SAUCE OVER BOTTOM LAYER OF RICE TOP THE MEAT SAUCE WITH THE RICE MIXTURE THAT IS LEFT ...N SET ASIDE. PREHEAT OVEN TO 350

    IN A MEDIUM SIZED BOWL MIX TOGETHER BREADCRUMBS, OLIVE OIL (U MITE NEED MORE...MIXTURE SHOULD STAY TOGETHER WEN SQUEEZD) GRATED GARLIC AND PARMESAN CHEESE. NOW PRESS THIS MIXTURE ONTOP OF RICE PIE.

    BAKE UNCOVERD FOR 45 MINUTES OR UNTIL BREADCRUMBS START TO LOOK TOASTY. LET PIE SIT FOR ABOUT 20 MINUTES B4 CUTTING...ENJOY :)
