Ingredients For rice and zucchini bake!
- MAIN INGREDIENTS:

4 cwater, boiling

2 crice

1 tspsalt
-
4green onions (minced)

1 lgonion (diced)
-
1 lgbell pepper (diced... i use red) (slivered or diced)

2 lbsmall zucchini (4 green and 4 yellow) sliced into 1/2 inch thick

1 can(26 ounces) pasta sauce
-
1 tspeach: dry basil, anise seeds, garlic powder
- TOPPING:

1/4 cgrated parmesan cheese
-
1 pkgmozzarella cheese (8 - 16 ounces)
How To Make rice and zucchini bake!

1Preheat oven to 350 degrees.

2Bring 4 cups of water to a boil in a sauce pan. Add the salt. Add the rice. Cook covered on low heat for 20 minutes (or until rice is done).

3In another sauce pan, cook the onions for 5 minutes, add the remaining vegetables and cook for 5 more minutes. When the zucchini is tender, remove from heat. Drain well.

4Add pasta sauce and spices to pan. Gently fold in the cooked rice.

5Put rice and vegetable mixture into 9x13 inch baking dish.

6Sprinkle top of veggies and rice mixture with the parmesan cheese. Sprinkle the Mozzarella Cheese over the top. Bake uncovered for 25 minutes, until bubbly and cheese is melted and golden.

7*** Serve with a salad and enjoy!
