Ingredients For quick flatbread with roasted red pepper and feta

    pre-made flatbreads...i used kangaroo brand
  • 1 1/2 c
    feta cheese split into 4 equal parts
  • 1 c
    roasted red peppers (i oven roasted mine but i've used canned before with no change in taste)
  • 4 Tbsp
    basil, dried or fresh split into 4- 1t portions
  • 4 Tbsp
    olive oil, extra virgin or garlic flavored olive oil split into 4-1t portions
  • 4 tsp
    garlic powder
  • salt and pepper to taste
  • ROASTED RED PEPPERS
  • 2
    red peppers
  • 2 Tbsp
    olive oil
  • GARLIC OLIVE OIL
  • 1
    jar of your favorite olive oil
  • 4 clove
    garlic peeled and pressed to release oil

    Prepare roasted red peppers by placing them on a baking sheet and drizzling with olive oil. Roast at 400 degrees for about 20 minutes. Chop

    Garlic olive oil can be prepared weeks in advance by taking your pressed garlic cloves and adding them to the olive oil to infuse the flavor. Skip this step if using regular olive oik.

    Top pre-made flatbread with feta, red peppers, basil and garlic powder. Salt and pepper to taste. Drizzle olive oil over everything
