While on holiday in Tuscany, Italy, we stayed at a converted convent. The family that owned it were wonderful and shared many of their tasty recipes with us. Like most Tuscan recipes, this dish is simple with great ingredients. Enjoy! Pictures to come the next time this recipe is on my stove

Ingredients For pizzaiola ( speghetti "pizza style)

  • 12 oz
    speghetti
  • 10 oz
    peeled ripe tomaoes (canned is fine)
  • 5 oz
    mozzarella cheese
  • basil
  • oregano
  • salt & pepper
  • 3 Tbsp
    olive oil

How To Make pizzaiola ( speghetti "pizza style)

    In a deep skillet combine tomatoes with olive oil, basil, and salt & pepper.

    Cook mixture over medium high heat.

    Cook spaghetti in salted boiling water until al dente.
  • 4
    Drain spaghetti and add to tomato mixture
  • 5
    Toss well and add the mozzarella, oregano, extra basil and a drizzle of olive oil.

    When the mozzarella starts to melt, remove from heat and serve immediately.
