Ingredients For osso buco

1/4 colive oil

4-8 ozveal shanks

2celery stalks
-
3 smcarrots

1/2 lgonion diced

1 canwhole tomatoes

2 sprigrosemary

2 sprigthyme

1 1/2 cred wine

2 1/2chicken stock

1 cflour
How To Make osso buco

1put flour in a baking sheet season with salt and pepper and don't be afraid to taste flour it much harder to season later dredge veal shanks and shake off extra flour

2put olive oil in a large dutch oven brown the shanks on both sides and remove shanks

3add celery ,carrots and onions season with salt and pepper sauté about 5 minutes. Add tomatoes, rosemary and thyme. Add red wine add chicken stock bring to a boil. Reduce to simmer and add veal shanks cover for 1 1/2 to 2 hours, until tender season to taste serve with rice
