Ingredients For osso buco

  • 1/4 c
    olive oil
  • 4-8 oz
    veal shanks
  • 2
    celery stalks
  • 3 sm
    carrots
  • 1/2 lg
    onion diced
  • 1 can
    whole tomatoes
  • 2 sprig
    rosemary
  • 2 sprig
    thyme
  • 1 1/2 c
    red wine
  • 2 1/2
    chicken stock
  • 1 c
    flour

How To Make osso buco

  • 1
    put flour in a baking sheet season with salt and pepper and don't be afraid to taste flour it much harder to season later dredge veal shanks and shake off extra flour
  • 2
    put olive oil in a large dutch oven brown the shanks on both sides and remove shanks
  • 3
    add celery ,carrots and onions season with salt and pepper sauté about 5 minutes. Add tomatoes, rosemary and thyme. Add red wine add chicken stock bring to a boil. Reduce to simmer and add veal shanks cover for 1 1/2 to 2 hours, until tender season to taste serve with rice
