Ingredients For poppin' panzanella salad

  • 3 c
    day old crusty italian bread, cubed & lighlty toasted
  • 1 lg
    tomato, cubed
  • 1/4 c
    red onion, chopped
  • 5 lg
    basil leaves, torn
  • 1/4 c
    arugula, torn
  • 6 slice
    pancetta, torn
  • 4 slice
    asiago chesse, torn
  • DRESSING
  • 1/4 c
    olive oil, extra virgin
  • 1 tsp
    lemon zest, grated
  • 1/2 Tbsp
    balsamic vinegar
  • 1/2 Tbsp
    white wine vinegar
  • 1/2 tsp
    thyme, dried
  • salt & pepper to taste
  • **you can add capers, cucumbers, olives, salame, different cheeses & bread etc.**

How To Make poppin' panzanella salad

  • 1
    Combine all the dressing ingredients together in a large mixing bowl. Add bread cubes to the mixing bowl and coat. Let the bread marinate in the dressing for 10 minutes. Toss in remaining salad ingredients to the mixing bowl. Mix well. Serve!
