This is one of my Great Aunt Mary's recipes. She was an amazing cook! Everything she made was so delicious! We always looked forward to going to her house for a visit!

Ingredients For italian zucchini pie

4 cthinly sliced zucchini

1 cchopped onion
-
3 Tbspbutter
-
1/2 cchopped parsley
-
1/2 tspsalt

1/2 tsppepper

1/4 tspgarlic powder

1/4 tspbasil, dried

1/4 tsporegano, dried
-
2eggs, beaten
-
2 cshredded mozzarella
-
1unbaked pie crust
How To Make italian zucchini pie

1Cook zucchini and onion in butter for 10 minutes.

2Stir in parsley, salt, pepper, garlic powder, basil and oregano.

3In a separate bowl, combine beaten eggs with mozzarella cheese.

4Stir in zucchini mixture.

5Pour vegetable mixture into unbaked crust.

6Bake in preheated 375 degree oven for 20 minutes or until the center is set.

7Let stand 10 minutes before serving.
