I have tried several pizza crust recipes over the years, even the ones in envelopes and boxes from the store. This is the best, by far and simple to make, easy to work with and I have it into 3 sizes, tho I use the extralarge one, makes 1 extra large and two med to large pizza's depending on the thickness you press it to. I assembly line it and then wrap two in foil and freeze to have on a busy day. friends LOVE my pizza so I make LOTS

1 1/8 tspactive dry yeast

1/4 tspbrown sugar

3/4 cwarm water

1/2 tspsalt

1 Tbspolive oil

1 Tbspyeast plus 1 tsp.

How To Make italian pizza crust

1in large bowl wisk together yeast, sugar and water, let work 5 minutes

2stir in salt and oil

3add flour slowly, stirring, until a nice dough forms. I knead in the bowl and add more flour if necessary, but just a small amount at a time, such as 1/4 cup. you shouldn't have to add alot.

4cover and let rise in a warm draft free place for one hour

5I turn oven on while spreading the pizza crusts and toppings. I spray pizza pan with cooking spray, or if you don't have that, grease with oil and sprinkle with corn meal.

6divide dough onto prepared pan (s) I let the cold water run and dip my hand in it to spread the dough without it sticking to my hand.

7let dough rest spread on pizza pan for 20 minutes before proceeding with your toppings.

8when I put my pizza sauce on, I put in center of pizza crust, add 1/2 teaspoon jarred, minced garlic stir it, and spread out. then use parmasean cheese sprinkled, before adding pepperoni and other vegetables. it absorbs some of the pepperoni "grease" while baking.

9when your pizza is prepared with your favorite toppings, bake in a 425 degree oven for 20 to 25 minutes.
