Ingredients For italian lentil soup

1 lbbacon chopped to small piecies and browned

1 Tbspolive oil if needed

1 lgonion chopped or 2 bunches of salad onions chopped with tops incvluded

1 pkgbaby carrots chopped to bite sizes

2 lgcelery stalks chopped

6 clovegarlic crushed
-
1 Tbsporegano
-
1 1/2 Tbspbasil (fresh herbs is best)

2 qtbroth (beef or chicken)

2 cdried lentils

1 lgcan of petite diced tomatoes
How To Make italian lentil soup

1In a 5 qt stock pot, brown bacon piecies for about 5 minutes then add olive oil to the pan (if needed) and add chopped onions, smashed garlic, carrots, and celery and sauté for about 8 minutes.

2Now, add tomatoes, broth, oregano, basil and simmer for about 10 minutes.

3Next add 2 cups dried lentils and cook for 30 - 40 minutes more.

4Garnish with croutons and or fresh finely grated Parmesan cheese.
