Ingredients For italian lentil soup

  • 1 lb
    bacon chopped to small piecies and browned
  • 1 Tbsp
    olive oil if needed
  • 1 lg
    onion chopped or 2 bunches of salad onions chopped with tops incvluded
  • 1 pkg
    baby carrots chopped to bite sizes
  • 2 lg
    celery stalks chopped
  • 6 clove
    garlic crushed
  • 1 Tbsp
    oregano
  • 1 1/2 Tbsp
    basil (fresh herbs is best)
  • 2 qt
    broth (beef or chicken)
  • 2 c
    dried lentils
  • 1 lg
    can of petite diced tomatoes

How To Make italian lentil soup

    In a 5 qt stock pot, brown bacon piecies for about 5 minutes then add olive oil to the pan (if needed) and add chopped onions, smashed garlic, carrots, and celery and sauté for about 8 minutes.

    Now, add tomatoes, broth, oregano, basil and simmer for about 10 minutes.

    Next add 2 cups dried lentils and cook for 30 - 40 minutes more.

    Garnish with croutons and or fresh finely grated Parmesan cheese.
