Went to market and bought a basket of random veggies. Couldn't resist the price and thought it would be perfect for ratatouille. By seasoning each layer of veggies this came out so flavorful, thats why I call it flavortown!!!!! What a great side dish, or even a great lunch with some crispy bread to soak up all the juices!!

Ingredients For flavortown ratatouille

  • olive oil
  • 1 lg
    chopped onion
  • 1 md
    chopped red or green pepper
  • 2
    garlic cloves
  • 1
    hot pepper seeded and chopped
  • pinch red pepper flakes
  • bundle thyme
  • 1
    14.5 can chopped petite tomatoes
  • 1
    chopped eggplant
  • 1
    chopped summer squash
  • 1
    chopped zuchinni
  • fresh chopped italian parsley
  • fresh chopped basil
  • fresh parmesan

How To Make flavortown ratatouille

    Cover bottom of saute pan with olive oil, add pinch of S&P and pepper flakes to season oil, bring up to med heat. Start by sauteing onions and peppers till onions opaqe about 7-8 min. Grate or finely chop garlic into veggies and cook for another two mins.

    Add can of tomatoes and thyme bundle and season with more salt. Cook and let warm for another 7min. Remove thyme bundle Take chopped eggplant, zuchinni, and squash season with salt and add to pan. Cook until squash soft about another 15-20min.

    Stir in chopped fresh basil, Parmesan, and parsley. Taste for seasoning. Serve warm or room temp.
