Ingredients For eggplant manicotti (diabetic)
- FILLING

1 lbfirm tofu

1eggplant, big slices

3 clovegarlic, minced finely

1eggwhite

1package no salt added frozen chopped spinach, thawed and drained

1-2 tspfresh basil leaves

1 jarno-salt added marinara
How To Make eggplant manicotti (diabetic)

1add firm tofu to mixing bowl, Whip tofu garlic and eggwhite (filling)

2Slice eggplant

3preheat oven 400 degrees Line baking sheet with non stick foil or cooking parchment. Bake eggplant 25 minutes until tender remove from oven cool for 10 minutes

4scoop out eggplant pulp and chop into small pieces 1/4 inch to 1/2 inche. add to filling along with drained spinach and basil stir until well blended

5Cook Manicotti shells according to package instructions and drain

6spread think film of marinara sauce on the baking pan, stuff shells loosly with filling top with sauce bake 30-35 minutes at 350 degrees until heated
