Ingredients For egg plant pizza

  • 1 lg
    egg plant
  • 1 lg
    loaf of bread- french or cabatta
  • 1 can
    fireroasted tomatoes
  • 2 c
    sliced mushrooms
  • 1 md
    onion-diced
  • 2 c
    mozzarella cheese, low-fat
  • 1/2 c
    parmesan cheese, fat-free
  • 5 clove
    chopped garlic

How To Make egg plant pizza

  • 1
    Preheat oven to 425..cut eggplant in half and make slits in each half but not threw the skin. pour olive oil over each half and sprinke with salf and pepper and place face down and bake for 35 minutes. While it is baking... in large skillet add olive oil and saute mushrooms, onions, and garlic until golden, and add tomatoes...simmer about 20 minutes. When EP is tender scoop ot the filling and add to tomatoe mixture...half you bread and top with the mixture...be genereous..top with cheeses and bake until bread is crispy and cheese is melted..about 15 mins.... enjoy
