Ingredients For almost pasta primavera

3 1/2 lbspaghetti squash

1 cbroccoli flowerets

1 czucchini, sliced

1 cfresh mushrooms, sliced

1 csliced carrots

1garlic clove, crushed

3/4 tspbutter, unsalted

1 Tbspmilk
-
1/2 cparmesan cheese
-
1/4 tspsalt
-
1/2 tspitalian seasoning

1/8 tspcoarsely ground pepper

1/2 cpart skim ricotta cheese
How To Make almost pasta primavera

1Wash squash; cut in half lengthwise and discard seeds.

2Place squash, cut side down, in a baking dish; add 1/2 inch of water. Heat oven to 350, cover and cook 45 minutes or until squash is fork tender.Drain squash and cool.

3Using a fork remove spaghetti-like strands. Measure 3 cups of strands; set aside. Remove remaining strands for other use.

4Steam vegetables 7 to 10 minutes or until tender; drain well.

5Combine squash strands and vegetables, tossing gently. Cover to keep warm; set aside.

6Saute garlic in butter in a small saucepan; remove from heat. Add milk, cheese, and seasonings to saucepan. Cook over low heat, stirring constantly, until mixture is hot (do not boil).

7Spoon cheese mixture over vegetable mixture, tossing gently. Serve and enjoy!
