egg beaterequivalent to 4 eggs

How To Make strawberry-ricotta-stuffed french toast

1In bowl, combine ricotta cheese & sugar, mix well. In shallow bowl, beat egg beaters, milk and vanilla. Spread ricotta mix evenly over 4 slices of bread. Top each slice of bread w/ 1/4 cup strawberries. Top w/ remaining bread. Spray a lg skillet w/ cooking spray. Place over medium heat. Carefully dip each sandwich into egg mix, coating both sides. Place 1 sandwich in skillet and cook until both sides are golden. repeat w/ remaining sandwiches. Serve w/ maple syrup.
