This was adapted from a recipe by a Washington coast restaurant (now gone). You can use Scotch or something like Jack Daniels, which I used.

Ingredients For whiskey salmon

2salmon fillets, skin removed (6 ounces each)

1/2 call purpose flour

1 tspunsalted butter

1 Tbspolive oil

salt, to taste

white pepper, to taste

1 clovegarlic, peeled and minced

1 tspminced shallot
-
1/2 tspdijon mustard
-
1/2 tspbrown sugar
-
2 Tbspraspberry vinegar

1/2 cwhiskey (scotch or kentucky)

1/2 corange juice
-
1/2 cheavy cream
How To Make whiskey salmon

1Dredge fillets in flour, to coat both sides.

2In a large skillet, heat butter and oil until hot. Brown fillets slightly on one side. Add salt and pepper.

3Turn fillets over and add garlic, shallot, mustard and brown sugar. Cook for a few seconds.

4Add vinegar. Fillet should be browned on second side now. With fillets still in pan, deglaze pan with whiskey. Add orange juice. Swirl pan to mix ingredients.

5Reduce sauce until it begins to thicken. Add cream and cook until heated.

6Place fillets on plates and spoon some sauce over each. Garnish with grated orange zest or chopped green onions, if desired.
