Ingredients For vietnamese style pan seared bass filet

  • FOR THE MARINADE
  • 1 Tbsp
    sesame oil
  • 1 tsp
    each soy sauce and fish sauce
  • 1 Tbsp
    lemongrass finely chopped
  • 1 clove
    garlic minced
  • 1
    birds eye chili finely chopped
  • FOR THE FISH
  • 2
    bass filets skinless
  • 3 Tbsp
    vegetable oil
  • TO SERVE
  • fresh greens and lime wedges

How To Make vietnamese style pan seared bass filet

    Mix the marinade ingredients together and place in a large baggie. Add the bass filets and let marinade at least 1 hour or overnight best.

    Add oil to a large pan. Remove the fish from the marinade reserving the marinade. Sear the filets on each side for about 3 minutes. Remove to a dish and keep warm. Add the marinade to the pan and bring to a boil. Remove from heat.

    Add some greens of choice to a plate. Top with bass filet and drizzle the pan dripping over the fish. Squeeze a little lime and serve
