Ingredients For tuna thyme sandwich

1bread roll

1 canlight tuna
-
4-5 sprigfresh thyme

1 Tbspsoy sauce
-
juice from half a lemon
-
4capers
-
2 Tbspmayonnaise

1 Tbspchopped green onions

handful fresh spinach, roughly chopped

2 slicetomato, diced
-
2 Tbspfeta cheese, crumbled, low-fat

pinchjust a pinch of pepper
How To Make tuna thyme sandwich

1Cut roll in half and hollow out the insides (better to hold your filling and less carbs!). Set aside.

2Drain tuna. In one bowl, mix together tuna, lemon juice, pepper and 2 capers. Take leafletts of thyme off the stems and mix those in, too.

3In another bowl, mix mayo, spinach, tomatoes, 2 capers, green onions, feta cheese and soy sauce.

4Scoop tuna into bread, then top with spinach mayo mix. Enjoy!
