Inexpensive and easy to make ! Always liked these for a busy day with not much in the house to make for dinner with beans and baked fries ~ Also you don't need to buy the all white tuna which is more expensive the darker tuna just adds more flavor to them. Ingredients For tuna cakes ~ flavors of cape cod

3-4 Tbspolive oil

3/4 cchopped celery
-
2 Tbsplight cream cheese

2 tsplemon juice

1/3 cdry bread crumbs

1 tspdill
-
pinch of black pepper

9 1/4 ozcan tuna ( of course you could use canned salmon etc) and you can use the darker meat tuna as well

1egg white, lightly beaten
How To Make tuna cakes ~ flavors of cape cod

1Saute celery in 1 Tablespoon oil for 2-3 minutes. Remove from the heat and add remaining ingdredients.

2Divide into four cakes. Saute two minutes each side in remaining oil, until golden brown.

3Serve with tarter sauce. Serves 2
