Ingredients For tomato-basil baked fish

  • juice from 1 lemon
  • 1 tsp
    olive oil, extra virgin
  • 8 oz
    orange roughy, red snapper, cod, or haddock fillets
  • 1 Tbsp
    basil, fresh, chopped
  • 1/8 tsp
    each salt and pepper
  • 2
    plum tomatoes, thinly sliced
  • 2 tsp
    grated parmesan cheese

How To Make tomato-basil baked fish

  • Fish in Olive Oil-Lemon Marinade

    In a shallow dish, combine the lemon juice and oil. Add fish fillets; turn to coat.

    Place in a greased 9-inch square baking dish. Sprinkle with basil, salt and pepper. Arrange tomatoes on top; sprinkle with Parmesan cheese.

    Cover and bake at 400°F for 10-12 minutes or until fish flakes easily with a fork.
