8 ozorange roughy, red snapper, cod, or haddock fillets

1 Tbspbasil, fresh, chopped

1/8 tspeach salt and pepper

2plum tomatoes, thinly sliced

2 tspgrated parmesan cheese
How To Make tomato-basil baked fish

1In a shallow dish, combine the lemon juice and oil. Add fish fillets; turn to coat.

2Place in a greased 9-inch square baking dish. Sprinkle with basil, salt and pepper. Arrange tomatoes on top; sprinkle with Parmesan cheese.

3Cover and bake at 400°F for 10-12 minutes or until fish flakes easily with a fork.
