I had some left-over tilapia fillets, so i decided to make some healthy sandwiches w/ them.

Ingredients For tilapia sandwiches

1/4 clite mayonnaise

1/4 cdiced red onion
-
1/2 cfinely chopped, seeded tomatoes

2 Tbspdill pickle relish
-
1/2 tspcayenne pepper
-
salt and pepper to taste

2tilapia fillets
-
1 tspold bay seasoning
-
1/2 tspgarlic powder
-
2 Tbspbutter
-
4 slicepepperjack cheese, reduced-fat if you can find it.

4 slicewhole wheat bread, toasted
How To Make tilapia sandwiches

1In bowl, stir together mayonnaise, onion, tomatoes, relish and cayenne pepper. Set aside.

2Season both sides of fillets w/ old bay seasoning and garlic powder. Melt butter in skillet over medium heat. Add fillets and cook about 3-5 min per side, or until fish flakes easily and is well browned.

3Place 2 slices of cheese on each fillet. Cover skillet until cheese melts. Place each fillet onto a slice of toast. Spread w/ the mayonnaise sauce. Top w/ remaining toast.
