We love Thai flavors (not hot chiles though) and always have albacore canned tuna on hand. We came up with this as a flavorful new twist on typical tuna salad.

Ingredients For thai tuna open-faced sandwich

  • 1 7 oz. can
    albacore tuna
  • 1/4 c
    scallions chopped
  • 1/4 c
    fresh cilantro chopped
  • 1/8 c
    mayonnaise
  • 1/8 c
    plain non-fat yogurt (thick greek style good)
  • 3 Tbsp
    lemon juice
  • 2 slice
    whole grain toast (sourdough is great!)
  • 2 Tbsp
    peanut butter

How To Make thai tuna open-faced sandwich

  • 1
    Mix tuna through lemon juice together. Toast bread while mixing. Spread with your favorite peanut butter (as thick or thin as you like).

    Top peanut-butter toast with tuna mixture. Garnish with cilantro for pretty presentation. Eat with hands or forks - your choice.

    Makes fun appetizer on crackers with peanut butter, too. People will be amazed at the flavor pairings, but it's always a hit.
