We love Thai flavors (not hot chiles though) and always have albacore canned tuna on hand. We came up with this as a flavorful new twist on typical tuna salad.

Ingredients For thai tuna open-faced sandwich

1 7 oz. canalbacore tuna

1/4 cscallions chopped

1/4 cfresh cilantro chopped

1/8 cmayonnaise

1/8 cplain non-fat yogurt (thick greek style good)

3 Tbsplemon juice
-
2 slicewhole grain toast (sourdough is great!)

2 Tbsppeanut butter
How To Make thai tuna open-faced sandwich

1Mix tuna through lemon juice together. Toast bread while mixing. Spread with your favorite peanut butter (as thick or thin as you like).

2Top peanut-butter toast with tuna mixture. Garnish with cilantro for pretty presentation. Eat with hands or forks - your choice.

3Makes fun appetizer on crackers with peanut butter, too. People will be amazed at the flavor pairings, but it's always a hit.
