sweet and sour shrimp stir-fry

I am trying to make some healthier versions of recipes I like, using ingredients I have on hand. This is a very easy recipe but tastes very good. Great served with your favorite steamed rice or whole wheat noodles. These pictures from the internet are not mine but just used to show you howthe finished product should look.

Ingredients For sweet and sour shrimp stir-fry

3 Tbsppeanut oil

1/2 lblarge shrimp, peeled, deveined, tail on

1 Tbspfresh, grated ginger

1/2 tspcrushed red pepper flakes

1/2 mdonion, cut into 4 wedges
-
2 ozcanned pineapple, blended with 7 ounces pineapple juice
-
1 smred bell pepper, cut into 1-inch pieces
-
1handful of snow peas
-
1 pinchsalt
-
1 pinchblack pepper
-
1 Tbsphoney, or to taste

1lime, juiced, or to taste

1 - 2green onions, thinly sliced
How To Make sweet and sour shrimp stir-fry

1Heat a heavy, non-stick skillet or wok over high heat, add 2 tablespoons peanut oil.

2Stir-fry the shrimp until they turn pink, 2 or 3 minutes. Remove from pan and set aside.

3Heat the remaining oil; add the ginger, onions and red pepper flakes; stir-fry until the onions are tender-crisp, another 2 or 3 minutes.

4Add the pineapple puree and let the sauce reduce for 1 minute.

5Add the bell pepper pieces and snow peas. Stir gently. Season with salt, black pepper, lime juice, and honey to taste.

6Cook, stirring constantly, for another 2 minutes.

7Return the shrimp to the pan, stir well, and sprinkle with the finely sliced spring onion.

8Serve immediately with your favorite rice.
