Once I found this recipe, I can no longer cook just "plain" trout.

Ingredients For steamed trout with ginger and scallions

  • 2
    cleaned trout with heads removed
  • course sea salt
  • 2 Tbsp
    vegetable or olive oil
  • 1/2 Tbsp
    soy sauce
  • 1 Tbsp
    sesame oil
  • 2
    thinly sliced garlic cloves
  • 2 1/2
    cm. piece of peeled and slivered ginger
  • 2
    thinly sliced scallions

How To Make steamed trout with ginger and scallions

    Wipe the fish inside and out with paper towels. Then rub with salt inside and out, and leave for 20 min. Pat dry with paper towels. Place 2T.oil in skillet and place the fish in with tails pointing in opposite directions. Cover, and simmer over med. heat 6 min. on each side, or until tender, and the flesh is opaque near the bone. Carefully transfer to plate. Sprinkle with soy sauce, and keep warm.

    Add the sesame oil, and when hot, add the garlic, ginger, and scallions. Stir-fry for 2 min., or until golden. Pour over the fish. Garnish with chive leaves and lemon slices. Serve with rice and an oriental salad. Enjoy!
