Ingredients For spinach-stuffed flounder

44 oz flounder or sole fillets

110 oz pkg frozen chopped spinach

1 tspminced garlic

1 tspolive oil
-
1/3 ccrumbled feta cheese

1/2 cherb seasoned stufffing mix

2 Tbsplemon juice

1 tspdried dillweed
How To Make spinach-stuffed flounder

1Heat oven to 350. Spray a rectangular pan w/ cooking spray. Rinse fish and pat dry w/ paper towels. Cook spinach as directed, cool, drain and squeeze dry.

2Cook garlic in oil in skillet until tender. Remove from heat. Add spinach, feta cheese, stuffing mix, 1 tbsp lemon juice and dillweed. Mix well. Spoon 1/3 of mix onto each piece of fish.

3Roll up fish around stuffing mix. Place fish, seam-side down into pan. Brush fish w/ remaining lemon juice. Bake, uncovered for about 20 min, or until fish flakes easily.
