This is a very easy and tasty recipe! One pan, a few ingredients, 30 minutes, and you're done! Its very hearty also. The flavors go together nicely. I think of it as an Italian version of fish and chips!

Ingredients For skillet potatoes with pesto and shrimp

2large potatoes - washed, peeled and thinly chopped

3 or 4 Tbspolive oil, extra virgin

salt and pepper to taste

1/3 cpesto

1/2 lblarge shrimp - 31 - 40 count size - cleaned and peeled
How To Make skillet potatoes with pesto and shrimp

1Heat oil in a large skillet on med/high heat

2Sprinkle potatoes with salt and pepper.

3Add potatoes to skillet and cook til tender, stirring frequently.

4Add shrimp and cook til shrimp is opaque. Then add pesto and toss to coat.

5Cook for about 1 minute to heat pesto.

6Taste and add more salt and pepper if needed.

7Serve warm.
