This is a very easy and tasty recipe! One pan, a few ingredients, 30 minutes, and you're done! Its very hearty also. The flavors go together nicely. I think of it as an Italian version of fish and chips!

Ingredients For skillet potatoes with pesto and shrimp

  • 2
    large potatoes - washed, peeled and thinly chopped
  • 3 or 4 Tbsp
    olive oil, extra virgin
  • salt and pepper to taste
  • 1/3 c
    pesto
  • 1/2 lb
    large shrimp - 31 - 40 count size - cleaned and peeled

How To Make skillet potatoes with pesto and shrimp

    Heat oil in a large skillet on med/high heat
  • 2
    Sprinkle potatoes with salt and pepper.
  • 3
    Add potatoes to skillet and cook til tender, stirring frequently.
  • 4
    Add shrimp and cook til shrimp is opaque. Then add pesto and toss to coat.

    Cook for about 1 minute to heat pesto.

    Taste and add more salt and pepper if needed.

    Serve warm.
