shrimp sausage pasta with hollandaise sauce
Just made a good hollandaise sauce and thought what, besides eggs, would this go good with… This is a pasta recipe with shrimp and sausage that totally rocks. I wouldn’t recommend eating this every day… unless you have a death wish :-) With that said, it is a great dish with awesome flavors. So, you ready… Let’s get into the kitchen.

Ingredients For shrimp sausage pasta with hollandaise sauce

6 lgshrimp, jumbo variety, about 4 ounces

4 ozchorizo, mild or hot, your choice

4 ozdry fettuccini pasta
-
1/2 tspolive oil
-
3 Tbsplemon juice, freshly squeezed
-
1 Tbspcapers, with juice
-
dry wine, just a splash for deglazing
-
kosher salt, to taste
-
black pepper, freshly ground, to taste
-
1/4 chollandaise sauce, more on that later
How To Make shrimp sausage pasta with hollandaise sauce

1Gather your ingredients.

2Cook the pasta according to the package directions.

3Drain the pasta and reserve.

4Add the olive oil to a sauté pan over medium heat.

5Add the chorizo and allow brown on both sides, about 2-minutes per side.

6Chef's Note: Chorizo can generate a bit of grease. When it's finished cooking make sure that you drain off any excess before continuing.

7Deglaze the pan with a generous splash of the dry white wine.

8Add the shrimp, the capers, and the caper juice to the pan.

9Chef's Tip: Sauté the shrimp until they have lost their pink, and begin to turn opaque, about 2 to 3 minutes.

10Add the remaining lemon juice, and toss with the ingredients.

11Add the pasta to the pan, and toss with the chorizo and shrimp, about 1 minute.

12Add to a large plate.

13Drizzle with the hollandaise sauce, and serve while still warm. Enjoy.
