I used to make this for a late New Year's Eve supper every year...back in the days when I actually used a Chafing Dish. Now it goes directly from stove to table, but is still good.

Ingredients For shrimp newburg

1/3 cbutter

2 Tbspenriched flour

2 clight cream

4slightly beaten egg yolks

1/2 tspsalt

1/4 csherry

2 tsplemon juice, fresh

2 ccleaned shrimp
How To Make shrimp newburg

1Melt butter in chafing dish or pan; blend in flour; gradually stir in cream. Cook slowly, stirring constantly till sauce thickens.

2Stir small amount sauce in to egg yolks; return to pan and cook till blended, stirring constantly, about 1 minute.

3Add cleaned raw shrimp and salt; heat thoroughlyj. Add Sherry and lemon juice. Serve over hot toast points. Sprinkl with paprika. Makes 5 or 6 servings.
