It's summer time, which means it's time to break out the grill and put some shrimp on the barbie. However, this shrimp recipe calls for grinding up the shrimp and making shrimp cakes, or shrimp sliders. Top it with some mango salsa (or your favorite salsa), or perhaps even some greek yogurt, throw it in a bun (if desired), and enjoy a healthy, fresh, light summer meal.

Ingredients For shrimp cakes

  • 2 c
    small or medium raw shrimp, deveined and shells removed
  • 2 slice
    sprouted whole grain bread (can use regular white or wheat as well)
  • 2 Tbsp
    chives, roughly chopped
  • 2 Tbsp
    cilantro, chopped
  • 2 clove
    garlic, minced
  • 1/2 c
    celery, finely chopped
  • 1 tsp
    lemon zest
  • 2 Tbsp
    lemon juice, fresh
  • 2 Tbsp
    mayonnaise
  • 3/4 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 3 c
    your favorite salsa blend (i chop mango, red onion, red pepper, avocado, add black beans, salt and pepper)
  • 1 c
    greek yogurt (optional)
  • 6
    mini buns (optional)

How To Make shrimp cakes

    Using a food processor, blend the bread until it becomes a fine crumb, then transfer to a medium bowl. To that bowl, add the celery, lemon zest, lemon juice, mayo, and salt and pepper.

    Next, add the shrimp, cilantro, chives and garlic to the food processor and pulse until it becomes a textured paste.

    Add the shrimp mixture to the bowl and stir to combine.

    Form small patties and refrigerate for at least 20 minutes. Meanwhile, preheat the grill to a medium heat. You can also use a frying pan over the stove. When grill is ready, spray cooking oil on the patties (or oil your grill) and cook for approximately 3-5 minutes per side, until they are a crispy golden brown.

    Remove and serve on a bun, or naked with your favorite salsa or yogurt blend.
