Big fan of shrimp, so why not Shrimp Cakes? These are sort of like Crab Cakes, but with shrimp. Tasty and healthy, these make a great snack or meal when served with a nice side dish, or your favorite salsa.

Ingredients For shrimp cakes

  • 2 c
    shrimp, peeled and deveined
  • 2 slice
    sprouted whole grain bread (can substitute with wheat or white)
  • 2 Tbsp
    green onions, chopped
  • 2 Tbsp
    fresh cilantro, chopped
  • 2 clove
    garlic, minced
  • 2 stick
    celery, chopped
  • 2 Tbsp
    lemon juice
  • 2 tsp
    lemon zest
  • 2 Tbsp
    vegenaise (can use regular mayo)
  • 3/4 tsp
    salt
  • 1/4 tsp
    pepper

How To Make shrimp cakes

    Using a food processor, blend the bread until it becomes a fine crumb, then transfer to a medium bowl. To that bowl, add the celery, lemon zest, lemon juice, mayo, and salt and pepper.

    Next, add the shrimp, cilantro, chives and garlic to the food processor and pulse until it becomes a textured paste.

    Add the shrimp mixture to the bowl and stir to combine.

    Form small patties and refrigerate for at least 20 minutes. Meanwhile, preheat the grill to a medium heat. You can also use a frying pan over the stove. When grill is ready, spray cooking oil on the patties (or oil your grill) and cook for approximately 3-5 minutes per side, until they are a crispy golden brown.

    Remove and serve on a bun, or naked with your favorite side dish, salsa or yogurt blend.
