This shrimp and spaghetti squash is a quick and easy meal. The delicate shrimp are a tasty compliment to the buttery spaghetti squash. Fresh onions, bell pepper, and garlic add tons of flavor. We also added an extra sprinkle of Old Bay seasoning and it was delicious. It's a healthier weeknight dinner your family will love.

Ingredients For shrimp and spaghetti squash

1 smspaghetti squash

1/2 cchopped onion

1 smgreen pepper, chopped

2 Tbspolive oil

2 clovegarlic, crushed

2 tspOld Bay seasoning

1 tspcoarse sea salt

1/2 lbjumbo shrimp, cooked and cleaned
How To Make shrimp and spaghetti squash

1Split the spaghetti squash in half and remove the seeds.

2Pierce the outside of the squash. Place in a microwave-safe dish face down in a little bit of water.

3Cover and microwave for 9-10 minutes.

4While the squash is cooking, saute chopped onions and peppers in olive oil. Cook until soft.

5Add garlic, Old Bay, salt, and shrimp. Saute until vegetables are soft and the shrimp is heated; usually 5 minutes.

6Once the squash has cooled a little, peel it out of the skin with a fork.

7Place cooked squash on a serving dish. Top with the shrimp mixture.
