This shrimp and spaghetti squash is a quick and easy meal. The delicate shrimp are a tasty compliment to the buttery spaghetti squash. Fresh onions, bell pepper, and garlic add tons of flavor. We also added an extra sprinkle of Old Bay seasoning and it was delicious. It's a healthier weeknight dinner your family will love.

Ingredients For shrimp and spaghetti squash

  • 1 sm
    spaghetti squash
  • 1/2 c
    chopped onion
  • 1 sm
    green pepper, chopped
  • 2 Tbsp
    olive oil
  • 2 clove
    garlic, crushed
  • 2 tsp
    Old Bay seasoning
  • 1 tsp
    coarse sea salt
  • 1/2 lb
    jumbo shrimp, cooked and cleaned

How To Make shrimp and spaghetti squash

  • Split the spaghetti squash and remove the seeds.

    Split the spaghetti squash in half and remove the seeds.
  • Pierce the outside of the spaghetti squash and place in a dish with water.

    Pierce the outside of the squash. Place in a microwave-safe dish face down in a little bit of water.
  • Cover and microwave.

    Cover and microwave for 9-10 minutes.
  • Saute green pepper and onions.

    While the squash is cooking, saute chopped onions and peppers in olive oil. Cook until soft.
  • Add garlic, Old Bay, salt, and shrimp.

  • Remove strands from the spaghetti squash.

    Once the squash has cooled a little, peel it out of the skin with a fork.
  • Add spaghetti squash to a bowl and top with shrimp.

    Place cooked squash on a serving dish. Top with the shrimp mixture.
